We are often asked “but how do you make fresh pasta at home?” It is easier than one can think… No need for complicated ingredients or professional equipment.
Only simple genuine ingredients and the desire to get your hands dirty.
500 g re-milled durum wheat semolina
250 ml of water at room temperature
1 spoon of extra virgin olive oil
1 teaspoon of salt
½ teaspoon of turmeric
Put the flour on a pastry board, add water, oil, salt, and turmeric. Knead until an elastic dough is obtained. Make a ball and set it aside to rest for 30 min, covered with some food film.
After this time, roll out the dough with a rolling pin until you have a sheet of about 2 mm. Get 14 cm by 42 cm sheets, sprinkle the semolina on the surface, roll the dough and cut strips of about 7 mm large to create the noodles.
Create the nests with 4/5 noodles by wrapping them in your hands and place them on a cutting board.
You can cook them immediately, or put them in the freezer.
Cook the pasta in salted water, it will take about 3 min, drain the pasta and season with your favorite sauce.
